I love avocado and i could eat them with a bit of sea salt. And I could eat them mashed up in guacamole with an entire bag of chips.
Also I can eat them in the most glorious and most creamy pasta. The best part about this is no cream or butter in this, all you need is simple, fresh ingredients.
All you need are a couple of ripe avocado, fresh basil leaves, garlic, lemon juice and olive oil for the creamy texture. Then you can just through all into a food processor later give it a whirl.
Now, toss it with your favorite pasta noodles like spaghetti, rotini, macaroni, etc also with some fresh veggies. You can use any veggies but I loved to use sweet corn kernels and crisp cherry tomatoes.
