Easy Blueberry Quick Bread

Some years ago, we planned to go a local pick farm and pick fresh strawberries, blueberries and blackberries with my family. In fact, it’s a yearly tradition to my family would eagerly look forward to.I ate more berries then actually made them into baskets, but nonetheless, fun memories were made.

One of our favorite ways to use these blueberries was to make this blueberry bread recipe.

It was pretty simple to make and darn fail proof, everyone loves a lot.

This blueberry bread recipe eventually evolved into this cream cheese version.

It was fresh from the oven or warmed up with a bit of butter on top, this breed is perfect to enjoy anytime when you wish.
You can pair it with your morning coffee as breakfast treat or as a cold glass of milk and slice for snack.

Ingredients Required For Blueberry Cream Cheese Bread

  • A cup of butter
  • 8 oz of cream cheese
  • ¾ cup of sugar
  • 2 tsp of vanilla extract
  • 4 eggs
  • 2 cups of flour
  • 1 ½ teaspoon of baking powder
  • ½ tsp of salt
  • 2 cups of blueberries

How To Make This Bread

  • Preheat and Prepare Pans: preheat oven at 350 degrees and grease 2 loaf pans (9*5)
  • Mix Ingredients:Mix cream together the butter, cream cheese and sugar in a large bowl.
    And in vanilla extract and eggs. Then you can add in the flour slowly, baking powder and salt.
    Once combined, you can fold in the fresh blueberries carefully.
  • Bake:Later pour batter (which will be quite thick, that is okay) into the prepared pans evenly. And place into preheated oven and bake for 50 minutes or until toothpick comes out clean once when you inserted into the centre of bread.
    Then remove it from your oven and allow it to cool slightly before removing from pan and slicing it.

Tips For Ultimate Blueberry Cream Cheese Bread

  • Make sure that your baking powder should be fresh and toss your blueberries with a tbsp of flour to prevent your berries from falling to bottom of your bread.
  • If you are using an electric mixer to combine ingredients then switch to a wooden spoon or spatula to fold berries in. Don’t need to breaking berries open and having purple batter.
  • This recipe is perfect for full size loaves, muffins and mini loaves, just change up cooking time depending on which pay you use.

How To Store This Blueberry Cream Cheese Bread Recipe

  • Room Temperature: Store it in a Ziploc bag or in an airtight container for about 3 days.
  • Refrigerator: You can place bread in an airtight container about 7 days. Later you can warm up it in microwave for few seconds before enjoying it.
  • Freezer: Store this bread in a freezer safe container for about 3 months. Then thaw before enjoying it.
