  • Aromatics and Seasoning: Onion, garlic, carrots, herbs and a touch of tomato paste gives depth and heartiness.
  • Lentils: Green Lentils will hold their shape best. You can also mix green, black, red split. But avoid only red split because they cook too fast compared to Potatoes.
  • Potatoes: Small red or yellow potatoes will work great, no peeling required. You can also swap for sweet potatoes for a different flavor.

Step-By-Step:

  1. Initially, saute onion, garlic and carrots until softened.
  2. Add tomato paste, tomato sauce, potatoes and lentils and stir well.
  3. Add seasonings to this.
  4. Add water or Veggies broth.
  5. Let it simmer until lentils and potatoes are tender about 35-40 minutes.
  6. Check your potatoes with fork for doneness.
  7. Adjust seasoning and serve warm.
