- 1 1/3 sticks unsalted butter
- 3/4 cup granulated sugar
- 1 tbsp vanilla sugar
- 2 large eggs
- 1/4 cup sour cream
- pinch salt
- 3 1/2 cup all-purpose flour
- 2 tsp baking powder
- 6-8 medium apples
- 1 tsp ground cinnamon
- 1/2 lemon juice
- 1 tbsp semolina or plain breadcrumbs
- 1 egg
Instructions
Make the Dough:
Beat the butter, sugar and vanilla until the mixture is light and fluffy in a large bowl. Add eggs and sour cream, and mix until smooth. Gently work in salt, flour and baking powder just until a soft dough comes together. Divide into two balls and wrap in plastic and let them rest in fridge for 30 minutes.
Prepare the apples:
Peel out the apples, then grate them or slice into thin pieces , which you prefer. Squeeze out any extra juice , then toss with lemon juice and sprinkle of cinnamon. And set aside while you get crust ready.
Par-bake bottom crust:
Roll out one piece dough to fit a greased 9*13 inch pan. And place it inside, prick bottom with a fork and bake at 350°F for 8 minutes. Later take it out and let it cool slightly.
Add filling:
Now, sprinkle the crust with semolina to soak up juices. Spread apple mixture evenly on top.
Top with the lattice crust:
Roll out second piece of dough and cut into strips. Lay strips across the filling in a crisscross pattern to form a lattice. And seal the edges gently then brush the top with beaten egg.
Bake:
Return pie to oven and bake at 350°F for about 30-40 minutes.
