- 1 large onion
- 1 lb ground beef or ground turkey

- 1 bay leaf

How To Make This Keto Cabbage Roll Soup
Saute onions and garlic:
Initially, heat olive oil in a large pot over medium heat. Then add chopped onions and cook for 2-3 minutes and stir occasionally until softened and fragrant. Stir in minced garlic.
Brown the Ground Beef:
Add ground beef to pot. Season with a little salt and pepper then cook for about 7-8 minutes, until it's fully browned and crumbly break it apart with a wooden spoon.
Add Seasonings:
Sprinkle in thyme, oregano, paprika and any other favorite spices. And stir well to coat the meat and release their aroma.
Add Tomatoes and Cabbage:
Pour in diced tomatoes with their juices and add shredded cabbage and stir everything together so flavors start to combine.
Add Broth and Simmer:
Pour in broth and toss with a bay leaf, then bring soup into gentle boil later reduce heat and simmer uncovered for about 25 minutes or until cabbage is tender and soup is rich and flavorful.
Taste and Finish:
Now, season with more salt and pepper to taste. Serve hot and top with grated parmesan if you like.
Instant Pot MethodÂ
- Set instant pot to saute mode.
- Add oil, ground beef and cook it until browned.
- Stir in onion and garlic, cook for another 2 minutes.
- Add rest of ingredients except parmesan cheese.
- Close lid, set value to sealing and cook on high pressure about 20 minutes.
- Quick release pressure, remove bay leaf and stir.
- Serve warm and garnished with parmesan cheese if desired.
