This apple pie has always been one of my favorite dessert and it was a true classic in my family. I’d baked this recipe many times and it never disappoints me.
This recipe is a comforting treat which everyone loves. So I want to share it today with you, it’s so simple, timeless and absolutely worth making.
For 9*3 inch baking dish:
Beat the butter, sugar and vanilla until the mixture is light and fluffy in a large bowl. Add eggs and sour cream, and mix until smooth. Gently work in salt, flour and baking powder just until a soft dough comes together. Divide into two balls and wrap in plastic and let them rest in fridge for 30 minutes.
Peel out the apples, then grate them or slice into thin pieces , which you prefer. Squeeze out any extra juice , then toss with lemon juice and sprinkle of cinnamon. And set aside while you get crust ready.
Roll out one piece dough to fit a greased 9*13 inch pan. And place it inside, prick bottom with a fork and bake at 350°F for 8 minutes. Later take it out and let it cool slightly.
Now, sprinkle the crust with semolina to soak up juices. Spread apple mixture evenly on top.
Roll out second piece of dough and cut into strips. Lay strips across the filling in a crisscross pattern to form a lattice. And seal the edges gently then brush the top with beaten egg.
Return pie to oven and bake at 350°F for about 30-40 minutes.
This apple pie is one of those desserts that tastes amazing no matter how you enjoy it, it was fresh from oven, cooled to room temperature or chilled next day.
If you want alternatives, you can try adding a spoonful of whipped cream on top or drizzle with caramel sauce for an extra indulgent touch.
Keep leftovers in refrigerator for up to 4 days by covering it. While you are ready to serve another slice, then you can just pop it in to a 350°F oven for 10-15 minutes to bring back that cozy, fresh baked flavor.
