Green Bean Casserole Recipe

This is the best green bean casserole recipe which will made with fresh green beans, homemade cream of mushroom soup and traditional crispy fried onions for the perfect crunch. This will be a new favorite Thanksgiving side dish.

Key Ingredients

  • 2 tbsp of kosher salt.
  • 1.5 pounds of fresh green beans, rinsed and ends trimmed.
  • 2 tbsp of unsalted butter.
  • 1 medium yellow onion, diced.
  • 2 cloves garlic, minced.
  • 2 large portobello mushrooms, sliced.
  • 1 tsp of kosher salt to taste
  • ½ – 1 tsp of freshly ground pepper, to taste.
  • 2 tbsp of all-purpose flour.
  • 1 cup of chicken broth or vegetable stock.
  • 1 cup of half-and-half or evaporated milk.
  • ½ cup of breadcrumbs, optional.
  • 10 oz French fried onions.

How To Make The Fresh Green Bean Casserole Recipe

  1. Preheat the oven at 375°F, and grease a 9”13 casserole dish, and set aside.
  2. Blanch green beans in a large pot, bring about a gallon of water and 2 tbsp of salt to a boil. And add green beans and boil for 8 minutes. Later drain in a colander and immediately plunge the beans into a large bowl of ice water to stop cooking process, drain and set aside. You can skip ice bath, but your green beans just won’t stay as crisp.
  3. Now melt butter in a large skillet set over medium heat. Add garlic and onions, stirring occasionally until onions begin to soften about 4-5 minutes and add mushrooms, salt and pepper, continue to cook for another 1 – 2 minutes.
  4. Sprinkle in flour and stir to combine and cook for 2 minutes. Later add half and half and simmer until the mixture thickens, stir occasionally approximately 6-8 minutes.
  5. Then remove from heat and stir in all of green beans, transfer green bean mixture to prepared casserole dish.
  6. Top with breadcrumbs if using then layer French fries onions on top. Place casserole in oven and bake until bubbly about 20 minutes. If your onions start to brown too quickly, cover casserole with foil, serve immediately.

  • Make Ahead Direction

    • Prepare casserole but don’t top it with breadcrumbs and fried onions.
    • Instead, cool and store casserole tightly wrapped in the fridge for up to 48 hours.
    • To bake, allow casserole to sit at room temperature for 30 – 60 minutes.
    • Top with breadcrumbs and fried onions then bake according to the recipe.
  • Travel Tips

    • Long Drive: Refrigerate until leaving, then pack in a cooler with ice packs. And top with toppings at location and bake as directed.
    • Quick Drive: Skip the toppings and cover with foil and bake for 15 minutes. Then carefully transfer to car, later top with toppings and bake uncovered until hot and bubbly at your destination.

Storing And Reheating

  • Fridge: Store leftovers tightly wrapped in in fridge for about 4 days. You can store it in baking dish and just wrap it tightly with plastic wrap.
  • Reheat: For best results, reheat in oven at 375°F about 15 minutes or until warm. And add fresh fried onions on top will make it taste more.
  • Freeze: I don’t recommend to freezing leftovers because they will never be as good as fresh. However, you can freeze leftovers in airtight container for up to 3 months.
