I didn’t thought that this recipe was possible to make a Snickerdoodle better, but it has done with the addition of pumpkin. Then absolutely i love just about any pumpkin -y, especially during cooler fall and winter months.

These pumpkin snickerdoodle cookies are delicious and also easy to make. To prepare these easy pumpkin snickerdoodle cookies, start by creaming your butter. Once it’s creamed, then you can add in all ingredients except egg and flour. Later mixture, add in egg and then mix slowly in flour.
Next let it to be rest for an hour, until it becomes scoopable, this step will give pumpkin and cinnamon flavors. After an hour or your dough has chilled, scoop the dough out and roll it into individual cookies and roll each one in a mixture of cinnamon, sugar and pumpkin pie spice.
Later bake it, then you will have these easy pumpkin snickerdoodle cookies ready to serve!
These pumpkin snickerdoodle cookies can be made by using a stand or hand mixer. But I use hand mixer for this recipe.
Step 1: Cream Butter: Add softened butter and cream in a large bowl and mix for a minute.
Step 2: Add Pumpkin: You can add pumpkin puree, granulated sugar, brown sugar, vanilla, cinnamon, pumpkin pie spice, baking powder and salt. And mix ingredients well with a mixer until it combined well.
Step 3: Add Egg: You can add egg and mix until to combine together.
Step 4: Add Flour: Later slowly add flour and mix well until fully combined, scraping sides of bowl.
Step 5: Refrigerate: Now, place this cookie dough in fridge for at least 1 hour to chill and become scoopable, don’t skip this step. It’s very important to chill the dough to prevent dough from going flat and it brings out the flavors.
Step 6: Scoop Dough: Once dough had chilled, then scoop it about 2 tablespoons and form it into a ball.
Step 7: Cinnamon Sugar Mixture: Now, gently roll these dough balls into the cinnamon sugar and pumpkin spice mix making sure to coat well.
Step 8: Bake: Place these on baking sheet line with parchment paper and bake at 350F preheated oven for 11-13 minutes. Later remove cookies from oven and allow them to cool for few minutes on baking sheet.
Transfer these pumpkin snickerdoodle cookies to a wired cooking rack and continue cooling for 15 minutes. These cookies are continue to bake inside as they cool. Then you have your best cinnamon sugar pumpkin cookie recipe!
If you love cream cheese icing, these pumpkin snickerdoodle cookies are delicious when sandwiched with cream cheese icing .
For deeper and more molasses flavor, use dark brown sugar instead of light brown sugar in these pumpkin cookies.
